Chocolate Chip Banana Oatmeal Cups
These Banana and Chocolate Chip Baked Oatmeal Cups gave our cold house the perfect warm cozy smell to fall asleep with. I worried for a moment if the delectable senses would wake the kids up. While they baked, I went ahead and cleaned the kitchen. There’s just something about a clean kitchen that makes the world, at least my small world, feel like all is well.
Not only did these oatmeal cups smell good, the girls thought they tasted great too for breakfast the next morning! I popped them in the microwave to take the fridge chill off of them from their overnight stay and the chocolate chips became gooey bits that you just had to keep going back for more of.
The only changes I made to this recipe was that I had 3 bananas to use, thus I made one of my cups of oats a heaping cup to help accommodate. I also didn’t measure the vanilla, is there such thing as too much? So that measurement for me was an approximate. I also only used about half the nutmeg because my taste buds have never been a nutmeg fan. I ended up with 20 oatmeal cups as opposed to the recipes 12. My cups were full going into the oven as well so I presume my added banana and oats made the difference.
Now if you will excuse me, it’s time to go heat up some of these delicious oatmeal cups for my breakfast before I get started at work for the day.
